OK, so here is a break down 440 and 1095 are carbon steel pieces refer to the way cost of carbon in carbon steel What makes it more difficult to hold steel and edge longer, but makes it more difficult to sharpen, so it really depends on how I you use it. if this is a day of each utilization of the knife I told him to go with 440, so it can relatively easily 4440 sharpen and holds a good edge favorite My two steels are commonly used, are 440 (or 440c the same thing) and AUS 8 I will go with number 2 in the list 440 Hope that helps
